Hello everyone. I hope Memorial Day was dry and eventful. It was definitely eventful here and the rain held off for a while. I must say I have my fair share of mosquito bites. Summer must be here. Oh, my friends loved dressing up like Elvis. My newest subscriber and also a friend, Sarah, won the Elvis look alike award Monday afternoon. I think she has relatives somewhere near Memphis. Good news is she didn't show anyone her belly button ring. Looks like she's gonna win another contest too. Time for another party. I think we'll keep this one small. I'm in the mood for pasta, a salad, and a light dessert. A Pinot Grigio white wine goes well with this meal. Besides someone brought a bottle to my party and it's in the frig. The fried cheese appetizer isn't exactly Italian, but it's really good, actually if you use minced Proscuitto instead of country ham then it would be. This meal serves 4.

Green Olive, Country Ham, and Gruyere Fritters

Simple Creamy Vinaigrette Salad

Pasta with Butter, Sage, and Parmesan

Champagne Poached Peaches

Green Olive, Country Ham, and Gruyere Fritters:

6 eggs, separated

3/4 cup milk

1 1/2 cups flour

1 1/2 lbs Gruyere, grated

1/2 cup cooked country ham, minced fine

1/3 cup grated Parmesan cheese

1/2 cup pitted green olives, minced fine

1 tablespoon finely chopped garlic

Salt and freshly ground black pepper

Tabasco

2 tablespoons chopped fresh Italian parsley

Peanut oil for frying

Beat the egg yolks with a whisk until lemon colored. Stir in the milk, then gradually add the flour and beat until smooth. Using a rubber spatula, fold in all the remaining ingredients except the egg whites. Beat the egg whites until stiff but not dry. Fold the yolk mixture into the whites. Heat oil in an electric skillet or deep heavy pot to 350 degrees. Drop the batter into the oil by spoonfuls and cook, turning once if necessary, until golden. Fry in batches. This makes about 75 fritters.

Simple Creamy Vinaigrette Salad:

Dressing:

1 small shallot, minced

Salt and freshly ground pepper to taste

1 teaspoon Dijon mustard

1/2 cup extra virgin olive oil

About 1/4 cup white wine vinegar

1/4 cup heavy cream

Mix together shallot, mustard, salt, and pepper in small bowl. Add olive oil and whisk well. Add most of vinegar and cream and mix well. Taste and add more vinegar, mustard, or salt and pepper to suit your taste. Toss this dressing with torn assorted greens. You may add chopped tomatoes and black olives if you like. Pasta with Butter, Sage and Parmesan:

6 tablespoons butter

30 fresh sage leaves (or 1 tablespoon dried)

Salt and freshly ground pepper to taste

1 pound linguine or spaghetti

1 cup freshly grated Parmesan cheese

Bring a large pot of water to boil. Melt the butter in a small saucepan over low heat. Add the sage salt and pepper. Cook until the butter turns light brown, about 10 minutes. Salt the boilling water and cook the pasta according to the package directions.Spoon 2 tablespoons water into a large serving bowl. Drain the pasta and toss in the serving bowl with the butter and half the Parmesan plus more pepper. Pass the rest of the Parmesan at the table.

Champagne Poached Pears:

2 cups champagne or dry white wine

2 tablespoons raspberry liqueur

2/3 cup sugar

1 vanilla bean, split lengthwise

6 small but firm peaches

1/2 cup heavy cream

1 teaspoon sugar

1/2 teaspoon vanilla extract

Combine champagne, raspberry liqueur, sugar, and vanilla bean in a large deep kettle and bring to a boil. Reduce heat to a simmer, add peaches, and poach until tender but not soft, 5 to 10 minutes. Remove from the heat and let the peaches cool a bit in the liquid. Drain. Whip the cream with the sugar and vanilla extract until it forms soft peaks. Spoon over the peaches and serve. Enjoy!
