Mexican Corn and Chicken Casserole

Butterscotch Chip Brownies


1 quart tomato juice

1 lemon, juiced

2 limes, juiced

2 tablespoons red wine vinegar

1 teaspoon frozen apple juice concentrate

3 ripe tomatoes. Cored and diced

1/2 cup minced red onions

1 green bell pepper, minced

1 tablespoon dried basil

2 teaspoons dried tarragon

1/3 cup minced fresh parsley

2 tablespoons minced fresh chives

1/2 teaspoon paprika

1/8 teaspoon Tabasco

2 teaspoons soy sauce

1 14 1/2-ounce can whole tomatoes, or 3 very ripe fresh ones

2 cucumbers, peeled seeded and diced

1 clove garlic

In a large bowl combine all the ingredients except the whole tomatoes (canned or fresh), one of the cucumbers, and the garlic. Pour the juice from the canned tomatoes into the bowl. Remove the seeds from the canned tomatoes by rinsing them under gently running water. Squeeze them as you add them to the other ingredients to break them up. Puree the second cucumber with the garlic. Add this to the soup. Chill then season to taste.

Makes 7 servings: 77 calories per serving, 3g protein, 1g fat, 18g carbos

Mexican Corn and Chicken Casserole:

1 tablespoon vegetable oil

1 medium yellow onion, halved and sliced

2 cloves garlic, chopped

1/2 red bell, chopped

1 pound skinless, boneless chicken breast, cut into 8 pieces

1 14 1/2-ounce can whole tomatoes, with juice

2 cups corn kernels

1/2 teaspoon ground cumin

2 tablespoons diced canned mild green chiles

1/8 teaspoon Tabasco

1 teaspoon salt

1/4 teaspoon pepper

1 cup shredded reduced-fat jack cheese

Preheat oven to 400. Heat oil in a dutch oven or large skillet. Sauté the onion, garlic, and pepper for about 5 minutes over medium-high heat, until onions turn golden brown. Push to the side. Add the chicken. Stir and cook until all sides turn white. Pour the juice from the tomatoes into the pot. Break up the tomatoes and add them to the pot. Stir in the remaining ingredients except for the cheese. Simmer covered for 10 minutes. Top with the cheese and place in the oven, uncovered, for 15 minutes. If using a skillet transfer to an ovenproof baking dish.

Makes 4 servings: 312 calories per serving, 36g protein, 10g fat, 24g carbo

Butterscotch Chip Brownies:

1/4 cup vegetable oil

1 cup sugar

1/2 cup nonfat sour cream

3 egg whites

1 teaspoon vanilla

1 cup quick oats

1 cup unbleached flour

1/4 cup Dutch-process cocoa

1/4 teaspoon salt

1 teaspoon baking powder

1/2 cup butterscotch chips

Preheat oven to 350. coat a 7x11 inch or 8x8 inch pan with nonstick spray.Whisk together the oil, sugar, sour cream, egg whites, and vanilla. Add the remaining ingredients and stir until all is moist but still lumpy. Spread batter into the baking pan and bake for 20 to 25 minutes, until the center feels firm.

Makes 12 servings: 218 calories per serving, 4g protein, 7g fat, 36g carbs
