I’m going to give a menu that I’m not going to fix. I know everyone but me likes ground turkey in place of beef. Not me, I’m a beef girl. There’s something about ground poultry that I don’t like. In the interest of my fans though, here it is. Keep in mind that dessert should be that fat free, sugar free ice cream. It’s actually decent.

Pickled Shrimp (102 calories per serving, 5 servings)

Caesar Salad (107 calories, 8 servings)

Spicy Turkey Lasagna  (275 calories, 6 servings)

Pickled Shrimp:

1 pound raw shrimp

1/2 cup dry white wine

1/2 cup water

2 bay leaves, broken in half

2 scallions, sliced

1/4 cup lemon juice

1 teaspoon tarragon

1 tablespoon Worcestershire sauce

Dash of salt

Dash of pepper

Dash of hot pepper sauce

1 tablespoon olive oil

Peel and devein shrimp leaving tails on. In a deep nonreactive skillet or saucepan, combine wine, water, and bay leaves. Heat to boiling. Add shrimp and cook 3 to 4 minutes. Drain, reserving broth. Discard bay leaves. In a bowl, combine reserved shrimp stock with scallions, lemon juice, tarragon, Worcestershire, salt, pepper, hot sauce, and olive oil. Stir well. Add shrimp and toss to coat evenly. Cover bowl and refrigerate, tossing occasionally, for 24 hours, or up to 3 days.

Caesar Salad:

2 medium heads romaine lettuce

2 1/2 ounce slices French bread

2 garlic cloves, minced

2 tablespoons grated Parmesan cheese

4 tablespoons extra-virgin olive oil

4 tablespoons water

4 tablespoons fresh lemon juice

1 teaspoon mustard

Salt and pepper

Cut stems from base of lettuce. Separate leaves, wash, wrap in towel, and chill in refrigerator. Cut bread into cubes, spread in a baking dish, sprinkle with garlic, and toast 5 minutes, until golden. Arrange lettuce leaves in a salad bowl. Sprinkle with croutons and Parmesan cheese. Combine olive oil, water, lemon juice, and mustard. Pour over lettuce and toss to coat. Season with salt and pepper.

Spicy Turkey Lasagna:

3/4 pound Italian turkey sausage

1/2 cup finely chopped onion

1 teaspoon finely minced garlic

1/2 mushrooms, thinly sliced

2 cups chopped, canned Italian tomatoes

3 ounces tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

2 tablespoons finely chopped parsley

1/4 teaspoon fennel seeds

Crushed red pepper flakes

Salt

Freshly ground pepper

9 lasagna noodles, cooked according to package directions

1/2 pound part skim (or fat free) mozzarella, shredded

1/2 pound low fat (or fat free) cottage cheese

1 cup shredded Parmesan

In a large pot over medium heat, brown the sausage until it is no longer pink, breaking the pieces with the back of a fork. Add the onion, garlic, and mushrooms, and sauté, stirring, for about 5 minutes.

Add the tomatoes, the tomato paste, 1/4 cup water, and all the seasonings. Reduce the heat to a simmer, cover and cook for 1 to 1 1/2 hours, stirring occasionally. The sauce can be made ahead and refrigerated or frozen.

Preheat oven to 350 degrees. Lightly spray a 7x11-inch baking dish with oil. Coat the dish with a little of the sauce. Cover with 3 noodles and cover the noodles with half of the mozzarella, then half the cottage cheese; sprinkle with a third of the Parmesan. Spoon on just enough sauce to cover. Repeat with noodles, cheeses, and sauce. End with a third layer of noodles, sauce, and the remaining Parmesan. Bake covered for 30 minutes. Uncover and bake 15 minutes longer. Let it stand 10 minutes before cutting.
