Hello everyone. It’s time for a super bowl party. I don’t want to get into
who’s for what team. I got enough backlash from you people over the Presidential
election. Go Giants, no one intimidates me. Not everyone can win, hence the
I will be happy to come up with something next week, but for now, are you
ready for some football?
This is some of my favorite food, junk. You can invite all your friends
but tell them to leave the kids at home unless they’re over the age of 9. Monday
is a school day after all. This menu is for the male population, of which I
fit into perfectly, and suited for sports. There is nothing healthy about it.
That’s next week, remember? You also want food that can be done in advance so
you don’t have to miss any of the game. Just put it on the coffee table and
leave it be. A cooler next to the coffee table will also make life more convenient,
or you could just hire a server.

Artichoke Green Chile Cheese Dip
This menu will serve about 10 burly guys
3/4 cup bourbon
1 1/2 cups catsup
1/2 cup brown sugar
1 tablespoon minced onion
1 pound hotdogs, cut into 1 inch slices
Mix all ingredients. Simmer on very low heat for one hour. Serve in a chaffing
dish with toothpicks.
1 8-oz package cream cheese, softened
1 (14 oz) jar pizza sauce
1/3 cup onions, chopped
1 1/2 cups mozzarella cheese, grated
1 (6 oz) can ripe olives, drained and chopped
2 oz sliced pepperoni, chopped
Preheat oven to 350 degrees. Press cream cheese into bottom of 9-inch glass
pie pan. Spread pizza sauce over cream cheese and layer remaining ingredients
in order listed. Bake for 25 minutes. Serve with corn chips for dipping.
1 pound ground chuck
1/4 cup Worcestershire sauce
12 slices American cheese
1/4 cup ketchup (optional)
2 tablespoons mustard (optional)
2 tablespoons mayonnaise (optional)
1 tablespoon pickle relish, finely minced (optional)
48 mini rolls, in the shape of hamburger buns
Preheat the oven to 450 degrees. Line a rimmed baking sheet with foil to
facilitate cleanup. Pinch off one tablespoon of beef at a time and form into
balls. Arrange 1 1/2 inches apart on baking sheet and flatten into 2 inch patties.
Brush with Worcestershire sauce. Bake until burgers are just browned, about
5 minutes. Let cool. Lower oven temperature to 400.
Using a 1 1/2 inch round cookie cutter, cut 4 rounds of cheese from each
slice. Place directly on cooked meat patties.
Slice buns or rolls 3/4’s through. Using a small spatula, place meat patties
in buns. In a small bowl, combine ketchup, mustard mayonnaise, and relish. Stir
until well mixed. Spoon 1/2 teaspoon sauce onto each patty. Arrange burgers
in buns on baking sheet and cover with foil. If made in advance you can refrigerate
up to 24 hours. Bake uncovered until burgers are heated through and cheese has
melted, about 15 minutes.
Artichoke Green Chile Cheese Dip:
1 (6 oz can) marinated artichokes
3 green onions, chopped
1 (4 oz can) diced green chiles
1/2 cup mayonnaise
1 (8 1/2 oz) can artichokes, drained and chopped
2 cups grated cheddar cheese, divided
Reserving marinade, drain and chop artichokes. Sauté onions in 1-2 tablespoons
reserved marinade until softened, but not browned. In a mixing bowl combine
chiles with mayonnaise. Blend in plain and marinated artichokes and onions.
Fold in 1-cup cheddar cheese. Spread in greased oven proof serving dish. Bake
at 350 for 10 minutes or until heated through. Sprinkle remaining cup of cheese
over top and bake another 10 minutes. Serve hot with tortilla chips. This can
be made ahead and refrigerated.
1 lb extra sharp cheddar cheese, shredded
1/3 cup mayonnaise
2 tablespoons milk
1 tablespoon dried parsley
6 green onions, finely chopped
1 tablespoon Worcestershire sauce
1/2 teaspoon Tabasco
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon seasoned salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
1 loaf sliced white bread, crusts removed
1/2 cup butter, melted
Combine all ingredients except bread and melted butter. For each roll, flatten
one side of bread with a rolling pin and spread with cheese mixture. Roll bread
diagonally and secure with a toothpick. Place rolls on cookie sheet and brush
with melted butter. Bake at 375 degrees until cheese is melted and bread is
golden brown, 10 to 12 minutes.
Put a dab of peanut butter between 2 crackers. Melt white chocolate in double
boiler. Dip crackers in chocolate and let cool on waxed paper. These will freeze.
